apple cinnamon loaf

  • Ingredients

    • 1 cup nudie nothing but cloudy apple juice
    • 1/2 cup non dairy yoghurt
    • 1/4 cup neutral oil
    • 2 tsp vanilla extract
    • 3/4 cup caster sugar
    • 2 cups plain all purpose flour
    • 2 tsp baking powder
    • 1/2 tsp baking soda
    • 1.5 tsp ground cinnamon
    • 1/2 tsp salt
    • 2 medium apples, peeled and diced
    1. Preheat oven to 180°C. Grease or line a loaf pan and set aside.
    2. In a large bowl, mix together the juice, yoghurt, oil, vanilla and sugar.
    3. Add in the flour, baking powder, baking soda, cinnamon and salt. Mix well. Gently fold through the apples, reserving some to add on top.
    4. Pour into prepared loaf pan and bake in the oven for 55 minutes or until a skewer inserted into the centre of the loaf comes out clean. Transfer to a wire rack and cool completely.
    5. Slice into even pieces and serve.
