These days so many of us lead a super busy lifestyle! This stir fry is quick, easy and healthy… it’s prepared and served in just 17 minutes! The short cooking time also has many health benefits, including preserving vitamins and minerals. We’ve made this stir-fry deliciously fruity by adding fresh pineapple and nudie nothing but tropical breakfast juice (yum!). Pineapple is high in the powerful antioxidant Vitamin C, which is great for your immune system and your skin. Chicken is a great source of protein and B Vitamins and also contains Iron and Zinc. By combining these foods, we‘re creating a well-balanced, zesty and delightfully quick meal!

  • Ingredients

    – 10 snow peas
    – 6-7 broccoli florets
    – 1 zucchini (sliced)
    – ¼ cup of fresh pineapple
    – 1 tbsp. of sesame seeds
    – ½ red onion
    – 1 large chicken breast
    – 1 clove of garlic (crushed)

  • Sauce

    – 1 tbsp. of soy sauce
    – 1 tbsp. of sesame oil
    – ¼ cup of nudie nothing but tropical breakfast juice
    – ½ cup of chicken or vegetable stock

    Preparation Time: 10 mins

    Cooking Time: 7 mins

    1. Heat 1 tbsp. of sesame oil in a wok. Add crushed garlic, stirring in the oil for 10 seconds. Turn heat to high and add the chicken. Toss and stir-fry until brown.

    2. Add the zucchini, onion, snow peas, and pineapple – keep on a high heat and stir constantly for 2-4 minutes.

    3. Add the sauce ingredients into the wok and stir-fry for a further 2 minutes. Sprinkle with sesame seeds.

    4. You can serve over basmati or brown rice… delish!
