Looking for new and healthy back to school recipes for the kids’ lunchboxes?! These morning tea mini muffins will go down a treat!

This recipe combines fresh banana and yoghurt (two things that kids love already!) with our nudie nothing but cloudy apple juice (make that three things that kids love already!), to bring you a super healthy lunchbox snack your kids will gobble up for morning tea!

Bananas have a naturally sweet and delicious taste… With the added bonus of Vitamin B6 and magnesium. What are these good for? Vitamin B6 is essential for kids’ metabolism, immune system and brain development, whilst magnesium has the ability to relax the mind and body, helping kids to (hopefully) feel more zen-like. It also helps to maintain blood sugar levels… And you know what that means – no crazy sugar spikes (& no frustrated mum or dad!). These mini muffins are quick and easy to prepare and don’t contain added nasties!

  • Ingredients

    – 2 ½ cups of wholemeal spelt flour
    – 1 tbsp. of chia seeds
    – 3 tsp. of baking powder
    – ½ cup of maple syrup or honey
    – 1 ripe banana, mashed
    – ¼ of cup of nudie nothing but cloudy apple juice
    – 1 cup of natural yoghurt
    – ½ cup of olive oil or coconut oil
    – 1 egg, lightly beaten

  • Preparation

    1. Combine dry ingredients in a mixing bowl – wholemeal spelt flour, baking powder and chia seeds.

    2. Whisk wet ingredients in a separate bowl – egg, banana, maple syrup or honey, nudie apple juice and olive oil.

    3. Add the wet ingredients to the dry ingredients (but do not over mix).

    4. Finally, add natural yoghurt to the muffin mixture and spoon into a greased muffin tray.

    5. Place in preheated oven (200 C) for 10 -12 minutes, until golden.

    Leave to cool before removing.

    (For a delicious treat, top with cheesecake-style frosting – combine cream cheese & lemon
    (juice & zest) with vanilla and a little honey).

    Makes approx. 24 muffins (depending on tray size).
