a healthy gluten free carrot cake recipe

made using nudie nothing but carrot, apple, orange & ginger juice

This is no ordinary carrot cake! Packed with carrots and carrot juice, this cake truly bursts of colour and the all-important Beta-Carotene. Beta-what?! It is the precursor to Vitamin A, which gives us healthy skin, eyes and is anti-aging. Pow! Carrots are also rich in Vitamin’s C and K, folate, and potassium. This delicious carrot cake is grain free, so instead of using wheat flour like traditional recipes, we are using almond meal – this makes it gluten free and full of good fats & protein. There are plenty of reasons to go crazy over this cake.. it makes a perfect afternoon snack, or even dessert.

  • Ingredients

    – ¾ cup of nudie nothing but carrot, apple, orange & ginger juice
    – 3 cups of fresh grated carrot (approximately 2-3 carrots)
    – 3 cups of almond meal
    – 2 tsp. of baking powder (gluten free)
    – 3 eggs
    – ¼ cup of olive oil
    – 2 tsp. of cinnamon
    – ½ tsp. of nutmeg
    – 2 tsp. of vanilla extract
    – 1½ cups of date puree
    (puree 1 cup of pitted dates with ½ – 1 cup of hot water until a thick paste is made)

  • Topping

    – Greek yoghurt, honey & walnuts (you could use coconut yoghurt for a dairy free alternative).

    Preparation Time: 10 mins

    1. Preheat oven to 160 degrees, fan forced.

    2. Place all ingredients in a bowl and simply combine using a wooden spoon.

    3. Spoon into a baking tin and cook for 1- 1 ½ hours.

    4. Once cooled – top with greek yoghurt, honey & walnuts. Yum!

    This cake can be stored in the fridge for approx. 5 days.
