berry crumble recipe

made using nudie nothing but apples and blackcurrant juice

What’s not to love about berries? Not only are they delicious, but they are also packed with powerful antioxidants. This means they help fight the damaging effects of alcohol, stress, poor diet and highly processed and refined foods. Yippee! We could all use a dose of these once in a while, right?! Berries are also rich in Vitamin C and fibre, which makes them great for eyes, heart, skin & anti-aging! Combined with macadamia nuts, quinoa flakes, almond meal and coconut oil, this crumble has a crunchy, nutty, coconut flavour and is packed with the goodness of fibre, protein and good fats. 

It’s warming, delicious and free of anything nasty or refined!

  • Ingredients

    – 2 cups of blueberries (fresh or frozen)
    – 1 cup of raspberries (fresh or frozen)
    – 1 cup of blackberries (fresh or frozen)
    – ½ cup of nudie nothing but apples and blackcurrants
    – ½ tsp. of vanilla
    – ¼ cup of coconut sugar (you can increase this if you prefer it sweeter)
    – Juice of a lemon or lime
    – ½ cup of quinoa flakes (you can use oats if you can’t get hold of quinoa flakes)
    – 3 tbsp. of almond meal
    – 3 tbsp. of shredded coconut
    – ½ cup of macadamia nuts, roughly chopped (you can use any of your favourite nuts here instead)
    – ½ cup of coconut oil

  • Preparation time: 10 minutes

    Cooking time: 20 minutes

    Preheat oven to 180C fan forced

    1. Combine berries, nudie nothing but apples and blackcurrants, vanilla, ½ of the coconut sugar and lemon in a bowl. Mix well.

    2. In another bowl, combine the quinoa flakes, almond meal, shredded coconut and macadamias.

    3. Add the coconut oil and the remaining coconut sugar. Mix together until you get a yummy looking crumble.

    4. Place the berries in a baking dish and spread the crumble on top. Bake for 20-30 minutes until the top is golden and berries are oozing a little (yum!).

    Serve with a little coconut milk & coconut yoghurt.
