When do you go at red and stop at green? When you’re eating a watermelon of course (don’t follow this rule while driving though)! Watermelon is naturally sweet and is full of the powerful antioxidant lycopene, which is great for heart health. Did you know, watermelon actually contains more lycopene than raw tomatoes? It’s what gives watermelon its gorgeous pink colour! Watermelons are also rich in Vitamin’s A, C, B6, potassium, & magnesium. Wow! This delicious recipe is super simple and healthy too.

  • 250mL of super nudie refresh
  • 250mL of coconut cream or milk
  • 2 x tsp. of gelatin crystals (grass fed and Australian is best)
  • Freshly chopped watermelon
  • A couple of sprigs of mints
  1. Place the coconut cream in a saucepan and gently heat (do not boil).
  2. Add 1 tsp. of gelatine crystals and stir until dissolved.
  3. Pour into jelly moulds (you can also use silicon muffin trays), filling to about 1/3 full.
  4. Place in the fridge for approximately 4-5 hours to set.
  5. After the coconut jelly has set, place the super nudie refresh in a saucepan and gently heat (do not boil).
  6. Add 1 tsp. of gelatine crystals and stir until dissolved.
  7. Pour juice over set coconut jelly and fill the moulds to the top.
  8. Add fresh watermelon to the moulds and place in the fridge again for approximately 4-5 hours, until set.

To serve, add some more fresh watermelon and mint too – delicious!

Don’t fancy coconut? You can make the jellies with juice only and add fresh fruit for a super healthy snack or dessert!
